Lauren’s Favorite Country Breakfast Casserole

It’s no secret that I love breakfast. It’s my most favorite meal of the day, and by far the most important one! My mom has been making this Country Breakfast Casserole for as long as I can remember. Anytime she has visitors over for a holiday, she whips it up the day before and tosses it in the oven the next morning. She’s also made a few tweaks to the original recipe (found on Allrecipes) that make it myALL TIME favorite breakfast (notice I didn’t say the healthiest recipe of all time?). This past weekend, I hosted Andrew’s family for Mother’s Day brunch and they couldn’t get enough of the cheesy deliciousness. A few of them even asked for the recipe, so I thought this is the perfect opportunity to share a long time, family favorite.  Enjoy and let me know what you think! xoxo – Lauren

 

 

Ingredients:

Serves: 4

  • 1 (16 ounce) package of breakfast sausage
  • 2 chopped green onion
  • 2 cups of shredded Chedder cheese
  • 6 eggs, lightly beaten
  • 1 cup water
  • 1/2 cup milk
  • 1 (2.64) package country gravy mix
  • 6 slices of bread, cut into 1 inch cubs —> I substitute bread with frozen hash browns (1 bag)
  • 2 tablespoons of butter (optional)

Directions:

Preheat the oven to 325 degrees and grease an 11 x 8 or 9 x 13 inch baking dish.

Brown the sausage in a large skillet; drain fat. Since I normally double the batch for a larger group of people, I’ll also fry up 1 lb of bacon and crumble it up with the cooked sausage. Cut up the green onions and mix in with the meat. TIP: I do this part the night before in order to save time in the morning. It also helps contain the mess (and smoke if you’re anything like me). 🙂

Spread the meat mixture evenly across the bottom of the pan and top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; pour over cheese and meat mixture. Arrange bread squares or hash browns on top. If desired, drizzle melted butter over bread.

Bake 40 minutes in the oven (if you’re doubling the batch, you’ll need a solid 90 minutes in the oven) or until a knife inserted into the center comes out clean. Set aside for 10 minutes before serving.
